Stemplots... are those the ones with the box in the center, then the two lines on either side? I think they worked like this: the box contains the middle 50 percent of date. So just figure out where the middle half of your data is, then draw the box around it. As for the stems... I think they go out to the 99th percentile. So, say your data was 3 3 4 4 5 5 7 7. So, half of 8 numbers would be four, the middle four. Your box would be around 4 and 5. Then the left stem would go over to 3, and the right one would go over to 7.
